Sunday night dinner


Tim ran both a 4 mile and a 9 mile race today for colon cancer which he dedicated to my mother. I thought after what was essentially a half marathon that he deserved a good meal with lots of protein. I pulled the steamed mussels recipe from my "Scandinavian Cookbook" and doctored it to add some more anti-oxidants. It turned out to be the perfect meal after an active day.
